Raw Banana Lemon Pie

 
Make this right now.



It's been ages since I have posted a new recipe- but this one is too good to not share!

I discovered this great keeper, during a raw food ‘cooking’ class with Raw Rose many moons ago.  I've never met anyone that didn't fall in love with it and it literally takes minutes to preprae.  Enjoy!  Thanks Raw Rose!
 

Banana Lemon Pie (Raw, Vegan, Gluten Free)

3 cups pecans or walnuts
1.5 cups raisins
3 medium bananas
1.5 lemons
1-2 cups fruit of choice for topping.
 
Process nuts.  Add raisins until clumping.
Press into 9*9 pan. Grate lemon rind on top.
Coat sliced bananas in lemon juice and pour over base. 
Top with fruit of your choice.
*Try not to eat the whole thing!

Recipe: Dark Chocolate Almond Butter Cookies



Happy Saturday!
It is time to make some power packed cookies to fuel your adventures for the weekend!  Thank you to ELM Super Coach Kathy Penner for sharing the original Hollyhock recipe, which I have reworked to create my own, based on what I found in my kitchen this morning-hee hee. 

These cookies are full of natural ingredients, allow for 101 variations and they literally took me 5 minutes to mix up while I was waiting for the coffee (Brad) and tea (me) to brew this morning.  I am posting this recipe while they are cooking in the oven!  You can find all of my favourite whole food recipes in my cookbook NRG: Foods that will move you!  Download your own e-cookbook today!


Dark Chocolate Almond Butter Cookies
Makes 2 (small) dozen
Preheat the oven to 350 and line a baking sheet with parchment paper
Mix dry in a small bowl.  Mix wet in a large bowl.  Mix together and fold in additions.
Drop in small spoonfuls onto baking sheet.  Bake for 12 minutes until golden brown.

1 cup ground almonds (you could use spelt or any other whole grain flour here as well)
1 cup ground oats
1/4 cup ground flax
1 tsp salt
1/3 cup melted coconut butter
1 cup natural almond butter (or any nut/seed butter you like)
1/2 cup maple syrup (yum!)
1/2 tsp vanilla and 1/2 tsp almond extract
1/2 cup whole oats
1/3 cup whole almonds
1/3 cup raisins (or any other dried fruit like sour cherries!)
1/3 cup dark chocolate

Recipe: Coconut Lime or Ginger Molasses NRG Bars?

It's time for a new recipe! This one is for you, Cheryl and Sally...


Coconut Lime or Ginger Molasses?


Coconut Lime NRG (sound it out) Bars

2 cups mejoole dates
1 cup shredded coconut
1 cup rolled oats
1/2 cup almonds
2 tbs coconut oil, melted
1/2 tsp salt
1/2 tsp ground ginger
juice of 1 lime
1-2 tbs water to help combine

OR...

Ginger Molasses Bars

2 cups mejoole dates
1 cup shredded coconut
1 cup rolled oats
1/2 cup almonds
2 tbs coconut oil, melted
1/2 tsp salt
1 tsp ground ginger
1/2 tsp ground cinnimon
1-2 tbs molasses
1-2 tbs water to help combine
*Optional but highly recommended: mix in 1/2 cup dark chocolate chips after processed


Throw everything into a food processor and whirl until combined.  Press into an 8 by 8 dish lined with plastic wrap, or roll into a log and slice.  Cut into 16 bars or slices or even roll into balls.  Store in the freezer for easy access to energy!

Recipe: Dodge Balls

 
Have you tried the Hornby Island Energy Balls yet?  Sure you have;) AKA Hornby Hippy Balls. They are now found in a bar shape and lovely package fit to compete with the biggest bars on the market.  Huray for Hornby!  I love grabbing these for road trips and having them in my backpack for breakfasts on overnight camping trips.  They are loaded with energy and made with all natural ingredients...right in our backyard!

Healthy Double Chocolate Zucchini Brownies

It's that time of year again...what the heck are you going to do with all that zucchini??

The neighbours are only going to take so much of your limb length squash!  Grill it on the BBQ, bake it up zucchini stick style, fry it up like fritters with corn and smoked salmon, throw it in every sauce you make, top your pizzas and load up your quiche but first...

Make a triple batch of these beauties...


Warning: do not make these unless you like chocolate 

Healthy Double Chocolate Zucchini Brownies
1 cup almond butter
1.5 cups grated zucchini
1/3-1/2 cup maple syrup
1/3 cup cocoa powder
1 egg or vegan replacement (ie flax eggs)
2 tsp vanilla
1 tsp baking soda
1/2 tsp salt
Handful of dark chocolate or chips

Combine all ingredients well...place in parchment lined 8 by 8 pan...sprinkle with chocolate chips...  Bake at 350 degrees for 30-35 minutes.  These get better as the day goes on...
Serve with my Natural Vanilla Ice Cream!  Yummmm...

I Scream You Scream We All Scream for Ice Cream!!

It is something HOT in the Valley.  Mmmmmmm...I love it:).  Time to whip up a few cool treats!  Read on for my faves...

Too often 'cool treat' synchs with crazy sweet frozen treats loaded with additives, preservatives, colouring and multiple words we can't even pronounce.  There IS a better way to cool off!!   Break the cycle.  Get creative.  Think outside the icebox;).  Create your own healthy cool treat menu and say goodbye to the crazy non-food 'treats' more often...

Dark chocolate fig bars...oh my...

Do you like figs?  No?  Get outta here!

To tell you the truth, I didn't actually enjoy my first fresh fig tasting experience.  The fresh fig texture was remarkably similar to a raw sea urchin I (should never have) tried on the beach in Baja Mexico...long story.  

After falling in love with dried figs, however, I may try the fresh ones again one day...

Dried figs are moist, chewy, rich, little gifts of goodness.  They are high in fibre, potassium, magnesium, vitamin B6 and go for about 37 calories per fig.  You can check out some crazy fig facts online or you can just eat them...

Honestly I didn't even know I liked them until last month when I tried an Oskri Fig Dark Chocolate Bar.  I am always looking for bars that stand up to my 'is it real food?' test.  Oskri passed the test;)

Yum!  Figs AND chocolate are meant for each other it seems!
And so I was thrilled to stumble across this bag of organic dried figs at COSTCO the other day.   I have a feeling my membership will be paid in figs and coconut oil this year...

There are only 2 ingredients in the Oskri bars so I figured they wouldn't be too hard to recreate in my kitchen...Figs...and Dark Chocolate;)

I didn't have any 'good' chocolate in the house so I modified the ingredients and came up with my own version.  These bars take about 5 minutes to make and less time to eat the whole pan if you aren't carefll:)  Don't say I didn't warn you!  Enjoy!

Dark Chocolate Fig Bars
2 cups dried organic figs
2 - 3 tablespoons dark cocoa powder
2 tablespoons organic coconut oil 
*Optional: 1-2 tablespoons of chopped dark chocolate (for texture, of course:)

Chop figs and remove stems.
Mix in food processor until smooth.
Melt coconut oil and add to figs along with cocoa powder. 
Mix until combined then press into lined 8*8 pan.  
Refrigerate or freeze until set.  
Cut into 8 or 16 bars and enjoy:)
*16 mini bars at 75 calories, 1.8g fat, 13.6g carbohydrate, .8g protein each

Ideas:
I might double the recipe and make them twice as fat next time.  
I will also try using a nice 'good' dark chocolate instead of the powder/coconut oil...

Were they like the Oskri bars?  Yes...but with more texture & flavor...so...I think they were even better:)
