Recipe: Coconut Lime or Ginger Molasses NRG Bars?

It's time for a new recipe! This one is for you, Cheryl and Sally...


Coconut Lime or Ginger Molasses?


Coconut Lime NRG (sound it out) Bars

2 cups mejoole dates
1 cup shredded coconut
1 cup rolled oats
1/2 cup almonds
2 tbs coconut oil, melted
1/2 tsp salt
1/2 tsp ground ginger
juice of 1 lime
1-2 tbs water to help combine

OR...

Ginger Molasses Bars

2 cups mejoole dates
1 cup shredded coconut
1 cup rolled oats
1/2 cup almonds
2 tbs coconut oil, melted
1/2 tsp salt
1 tsp ground ginger
1/2 tsp ground cinnimon
1-2 tbs molasses
1-2 tbs water to help combine
*Optional but highly recommended: mix in 1/2 cup dark chocolate chips after processed


Throw everything into a food processor and whirl until combined.  Press into an 8 by 8 dish lined with plastic wrap, or roll into a log and slice.  Cut into 16 bars or slices or even roll into balls.  Store in the freezer for easy access to energy!
