Congrats on making it to the weekend! I think you deserve a treat:) Here is a new raw 'Sarah Bar' recipe that I tested out on the ELM Sunrise Bootcamp recruits this week! Based on the post taste audio (oooooooh...mmmmmm...that's gooooood) I think they were a success. But why don't you be the judge?
These 'slices' are raw, vegan and gluten free for folks who need these options...and they taste great for everyone who needs that too;) A natural alternative to store bought, packaged energy bars, these slices make a great on the go energy snack you can feel good about putting in your body (and your kids bellies;). The figs and coconut give them a nice little crunch;)

Chocolate Fig Coconut Slices
1 cup walnuts
1 cup almonds
1 cup mejool dates
1 cup dried figs
4 tbs dark coco powder
4 tbs coconut oil lightly melted
4 tbs coconut flakes (organic, unsweetened)
1-2 tsp molasses
1-2 tsp water as needed
1/4 tsp sea salt
*All ingredients are 'ish' so adjust as needed:)
Grind almonds and walnuts in food processor until ground then add all remaining ingredients, reserving 2 tbs of coconut flakes. Process until combined well and add 1-2 teaspoons of water if needed to bind mixture. Finish by pulsing in the coconut flakes. Spread on plastic wrap or parchment and roll the mixture into a log shape about 1.5 inches in diameter.
Set in the fridge and cut into 1/2 inch slices for easy to grab snacks! You can also press the mixture into a pan and cut into bars, or roll into balls. Your choice!
