I started with this recipe from Chocolate Covered Katie...and supercharged these into cookies full of 'OMG- you have to make these today'- goodness:) Go on, they're GOOD FOR YOU! I'm eating one right now...mmmmmmm...
... mmmmm...I'm eating another one...
Chocolate Chip Pecan Coconut Cookies
1 can chickpeas (or other canned bean) rinsed.
3/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup brown sugar (I don't like sweet cookies- you can go up to 3/4 if you are still working on decreasing your sweet tooth)
2 tsp vanilla
1/4 cup ground flax (This is the egg replacement. I love eggs! But this is an alternative for vegans that also adds fibre and omega 3s!)
1/4 cup peanut or almond butter
1/2 cup chocolate chips
1/2 cup flaked coconut
1/2 cup whole pecans
Throw everything except the last 3 ingredients into a food processor and blend until well combined. Add chips, coconut and pecans and pulse gently until just combined. Drop by the tablespoon onto a prepared tray.
Bake at 375 for about 10 minutes. Don't overcook them! Let them sit in the fridge overnight and they will be even better the next day (good luck with THAT!).
