OK I can't resist posting another weekday recipe for ya! I have been googling smoked salmon recipes for new ideas and came across this one that I had to try...very different quiche indeed!
SO good:
SMOKED SALMON QUINOA QUICHE:
Crust:
2 cups cooked quinoa
4tbs basil pesto
1/2 cup asiago cheese
Combine and press into a pie plate. Bake at 400 for 15 minutes to set.
Quiche filling:
4 eggs
1/2 cup milk
1/8 tsp salt
1/4 tsp pepper
1 cup smoked salmon chopped
Pour into crust, bake for 20 minutes then top with 1/2 cup asiago cheese. Cool, cut and devour!
