Smoked Salmon & Avocado Sushi with Ginger Mango Salsa

Oh Baby! Sushi is one of my fave meals and we have it on our menu at least every other week for sure. So fresh, so tasty and oh-so-good-for-you!



There are no rules, no recipes, no 'must-do's when it comes to making sushi. I don't think we have ever made the same rolls twice:) But, for those of you who haven't made your own sushi yet, here is a 'recipe' for you to get started.



Sushi Rice- add 1.25 cups of water for every 1 cup of sushi rice and cook according to package.

When cooked, fluff with fork and add a splash of rice wine vinegar and a dash of brown sugar.


Smoked Salmon & Avocado Sushi with Ginger Mango Salsa

Ingredients :

2 cups Cooked sushi rice

Nori sheets

1 big piece fresh smoked salmon diced

1 avocado sliced thin

2 chives sliced thin

1 red pepper sliced thin

1/3 cucumber (long english) sliced thin


Mango salsa:

1 mango diced

juice of 1/2 lime

1 tsp miced fresh ginger


Wasabi mayo (see salmon avocado burger post)


Spread about 1/3- 1/2 cup sush rice on bottom 3rd of nori paper

Drizzle 1 tsp wasabi mayo

Layer all ingredients onto rice

Roll up burrito style, wet edges to seal nori

Cut into 8-10 pieces


Dip in wasabi and soy sauce and gobble up! Yum Yum!
