I made these yummy, hippie (ie healthy) double chocolate brownies for my Royal Lepage Snow to Surf Team the other weekend. Although this recipe is not in my NRG: foods that will move you cookbook, I think it might need to be added to the next edition...because judging from the number of moans and recipe requests this is a keeper!! Gluten and dairy free, naturally sweetened and full of healthy, natural fats...these brownies should make almost everyone happy! Oh and did I mention you make the entire thing in the food processor? Too easy!

Team ELM Double Chocolate Brownies
1 cup ground almonds (grind them as fine as you can)
1/4 tsp salt
1/4 tsp soda
2 heaping tbs cocoa powder
1/2 cup coconut oil
4 oz dark dark chocolate (70% or higher, confirm it is dairy free if need be)
8 moist dates (mejool is best)
1/2 tsp vanilla
2 eggs
Combine all dry ingredients in a food processor.
Melt coconut oil and dark chocolate together and add to mixture along with dates and vanilla.
Blend until smooth.
Add eggs and pulse a few times until just combined- don't whip in too much air if you want dense, chewy brownies.
Bake in a greased 8*8 pan for 18-24 minutes at 350. Less is more! Even under cook them very slightly as they will continue to cook a bit when they come out of the oven.
Let them cool completely (ya, whatever) then cut into 16+squares and enjoy in moderation!!
PS they are even more chewy after sitting in the fridge for a few hours:)
